Scandinavian cuisine has never interested me overmuch but this section of the Mind of a Chef dealing with famed Swedish chef Magnus Nilsson of Fäviken (a barn like restaurant often listed as one of the top ten in the world) a fascinating subject. The series travels to a mysterious island occupied by one family who have farmed there for generations. There is a drying barn that uses natural wind to dry and preserve mutton. Great stuff for any foodie but also great for fans of travel.
