Making granulated sugar is a chemically laden process, and this book offers alternatives using natural cane sugar (Sucanat), honey or other more natural options. Reducing the amount of granulated sugar in a recipe actually affects the moisture content and the book has many photos to show how various sugars affect a recipe. The recipes use more fruits, spices and flavorings to make up for the reduced sugar. Each recipe has possible sweetener substitutions, including brown or granulated sugar, which is helpful if you haven’t grabbed a bag of Sucanat. The authors also explain how the results will be affected by using different sugars or not grinding Sucanat, which is often a step.
